Jean-François Ganevat, installed in à Rotalier in the hamlet of La Combe, is one of those cult names that resonate in the Jura, and elsewhere. rightly. Ganevat has mastered blends and micro-terroir vintages since 1998, after a long experience as cellar master at Jean-Marc Morey in Paris. Chassagne-Montrachet in Côte de Beaune, Burgundy. His meetings and experiences, notably with Philippe Pacalet (Burgundy), Didier Barral (Faugères) and the Gérard Schueller estate (Alsace) guided him to develop his career. towards organic and then biodynamic cultivation, in which he excels. His know-how and his philosophy then led him to in 2006 towards the production of wine without added sulfur, 100% natural wine.
His uninhibited quest for excellence and his sense of detail earned him the nickname of alchemist of grape varieties, or fanfan for the more intimate. With 12 hectares in ownership; on white and red Côtes du Jura, Domaine Ganevat produces very low yields, where only each terroir expresses its specificities. We are thinking in particular of; its schist soils on 'Billat', its blue marls on 'Chalasses', its clays on 'Les Grandes Teppes'…
Jean-François Ganevat also offers us reds in amphorae, in addition to his vin jaune or the iconic Les Vignes de mon Père, aged in 1980s. for ten years. His audacity and his know-how have made him a pillar of the Jura and he has accompanied its development. the Jura revival. It was with his sister Anne that Jean-François brought Jura wines into a new era: that of terroir wines, particularly with his aged (non-oxidative) Chardonnays and Savagnins. His experience in Burgundy gives him legitimacy. and extraordinary know-how regarding; mastery of lightning and barrel.
His curiosity leads him to develop many vintages to express the Jura terroir in a unique way. the image of Burgundian climates and its reveries, because what he seeks to achieve is express these are « Fruity wines, thirst-quenching, peasant wines. It's never mathematical, it all depends on the vintages. This is how in some years we can find up to 100%. 50 vintages from Domaine Ganevat including the famous, very distinctive vintages Florine (eponymous vintage of the daughter of the Ganevat house), Oregane (Savagnin and Red Tail Melon), Marguerite , Julien, or even his cult favorite, and just as rare, Les Vignes de mon Père. Jean-François Ganevat pays particular attention, offering whites of exquisite purity. unparalleled and intense. which leaves amateurs alert. He is extremely attentive, both in the vineyard and in the cellar, to remain as least interventionist as possible and to develop wines that resemble him, on oxidoreductive frameworks.
