Maître en fermentation, Nacho García s'est associé au chef Daniel Varea pour lancer Batch Madrid, un comptoir-resto établi au coeur du marché couvert de Vallehermoso, à Madrid, en 2021. Des dizaines de références de vins naturels et une carte avec moins d'une dizaine de propositions à base de produits locaux et de saison. La tomate rôtie au praliné de pistache, à la menthe et au parmesan était une tuerie! Tout comme la panna cotta de chou-fleur aux Shimejis, et le dessert, une tranche de céleri rave au café, à la cardamome et à la mousse d'orange. Mmmmmmh! Excellent petnat pour accompagner le tout: l'Ancestral rosé 2017 de Fernando Angulo, élaboré à base de Palomino, à Sanlúcar de Barrameda (Alicante). Dec 2023We booked a table in El2, but next time surely book here, because we went by this place and saw tones of nice natural wines, so come here, not to El2 if you are only for natural wines, even if the food was just amazing in El2.
