Dark rosé. Wild strawberries, red current, lychee, rose petals and melon in the nose. Structured, round and full of flavours in the mouth. Perfect as an aperitif or with light summer cuisine. Pinot Noir und Cabernet Carol grapes. Harvested by hand. Spontaneous fermentation with native yeasts. Not filtered, not fined. 6 months aging on the lees. Light orange golden yellow color. Aromatic and youthful, gourmand and elegant. Dried apricot, pine resin, orange blossom aromatics. Dry, medium-bodied with a pleasant tannic touch and pleasant refreshing acidity. Pair it with Indian, Moroccan, Thai and Indonesian cuisine, Korean and Japanese dishes, raw oyster, charcuterie, gnocchi, pasta... Grapes: 60% Chardonnay, 35% Sauvignon, 5% Muscat Alc. 13% Bottles produced: 3800 WInemaking: fermentation with native yeasts, maceration in open vats, no temperature control, ageing on lees in oak barrels for 18 months, unfiltered.
