Olidò, (a play on the pronunciation of the words ‘Holy Dough’ in an Italian accent), opened its doors on March 2, 2019, in the vibrant city of Amsterdam. Founded by Enrico, a passionate distributor of natural wine and biodynamic food, and Tommy, a skilled chef and pizzaiolo hailing from Campania.
Enrico, with his deep knowledge and love for natural wine, curates an exquisite wine list that complements the flavors of their delectable cuisine. He takes pride in educating customers about the art of natural winemaking, ensuring that each guest leaves with a newfound appreciation for the wines he’s selected.
Tommy, on the other hand, is the mastermind behind Olidò's remarkable fermented dough and pizzas. Drawing inspiration from his roots in Campania, he crafts pizza dough that follows the principles of slow food, allowing it to ferment for a minimum of 72 hours. This meticulous process results in a light and airy crust that perfectly complements the carefully selected toppings and doesn’t leave you with a heavy feeling after eating it.
The team at Olidò consists of seven dedicated individuals who share a passion for creating an exceptional dining experience. Their commitment to sourcing food directly from small farmers all across Italy, who follow biodynamic practices, sets them apart. By personally importing the ingredients, Olidò ensures that only the highest quality produce, in fact, every ingredient is tasted at its source where it’s produced before it reaches their kitchen.
