La Clac, located in Guatemala City, is one of the first Guatemalan wine bars dedicated to natural wines.
Created by Marta and Nils Saubès in 2021, the duo have had a deep passion for wild fermentation for many years. They first opened L'Aperó, a pizzeria that turns 10 this year, where they started experimenting with wood fire cooking and wild fermentation of doughs. Afterwards, they opened Miettes, a bakery and café where they bake an assortment of sourdough loaves and pastries. La Clac is simply a continuation of their exploration into wild fermentation, but this time in liquid form.
Nils grew up in Ardeche before moving to Guatemala. He was lucky enough to live in the same village as the famous natural winemaker Gilles Azzoni. Nils went to school with Gilles' children, and after tasting one of Gilles' wines, he was instantly converted, a passion he later transferred onto his partner Marta!
The natural wine scene in Guatemala and throughout a lot of Central America is just at the very beginning, it’s an exciting time and people like Marta and Nils Saubès are at the heart of it. Helping to spread these important and delicious beverages to the people. Cheers to them!
