This white wine from Penedès features Macabeu grapes from Las Parelladas vineyard in Sant Sadurní. The calcareous soil contributes to its distinctive mineral and saline finish. The wine undergoes eight days of skin contact fermentation and spends two months on lees with weekly stirring. Bottled without filtration or stabilization to maintain its natural character, it presents floral notes and a light, mineral structure.
Nefos is a captivating rosé crafted from three native Greek grapes—Xinomavro, Stavroto, and Krasato—grown high in the slate soils of Mount Olympus’s foothills. The 2022 vintage faced five months without rain and scorching temperatures above 40°C for over forty days, creating a distinctive depth and vibrant character. Handpicked grapes were fermented with native yeasts in whole bunches, then rested for eight months in old barriques. Unfiltered and naturally produced, this wine reveals the purest expression of its terroir. Interestingly, the previous 2021 harvest was delayed by heavy rains, resulting in higher sugar levels and a sweeter style. By contrast, the 2022 edition offers an elegant dryness, balanced by fresh acidity and subtle hints of ripe red fruit. Caviste
Estático is a dry white wine that shows a different side of Pedro Ximénez. Made mostly from this local grape, with a small share of other native varieties, it comes from old bush vines in the Sierra de Montilla, rooted in albariza soils known for holding moisture and giving wines a marked mineral feel. What makes this wine stand out is its ageing under flor for two years. This biological ageing brings depth, saltiness and a very distinctive sense of place. The fruit comes from the last days of harvest, adding a little more ripeness without losing freshness. In the glass, Estático offers notes of ripe white fruit, citrus, chalk, white flowers and aniseed, with a light iodine touch. The palate is fresh, long and very mineral, with a sapid, saline finish that stays with you.
