Sous le Végétal – Octave 2018 è un vino bianco macerato prodotto sull’isola greca di Samos da un progetto collaborativo tra Jason Ligas e Patrick Bouju. Questo vino nasce da otto parcelle situate nei villaggi di Pagondas, Platanos e Karvounis, coltivate secondo pratiche biodinamiche e vinificate senza aggiunta di solfiti o altri additivi. L'uva utilizzata è il Muscat Blanc à Petits Grains, noto per i suoi profumi floreali e agrumati. Dopo la pressatura, il mosto fermenta sulle bucce in tini di cemento e in anfore di terracotta da 75 litri, un metodo che conferisce al vino una struttura complessa e una leggera torbidità. Il risultato è un vino di colore dorato, con un profilo aromatico che combina note di fiori bianchi, agrumi e una marcata mineralità salina. Al palato, si presenta fresco, teso e vivace, con una persistenza lunga e un finale agrumato. È ideale da abbinare a piatti di pesce crudo, ostriche, crostacei e formaggi freschi.
