Livia 2019 di Sous le Végétal è un vino bianco secco prodotto sull’isola di Samos, in Grecia, da Muscat Blanc à Petits Grains. Il progetto di Jason Ligas e Patrick Bouju nasce da vigne coltivate in biologico nei pressi di Pagondas, sulle pendici del monte Karvounis, su terreni caratterizzati da scisto, quarzo e calcare. La vinificazione avviene per metà in botti Stockinger da 500 litri e per metà in acciaio, senza additivi e senza filtrazione. Al palato è secco, fresco e ampio, con la naturale aromaticità del Moscato accompagnata da una decisa componente minerale e salina. Il finale mantiene buona lunghezza senza appesantire il sorso. È particolarmente adatto con crudi e primi di pesce, crostacei, pesce alla griglia, carni bianche e verdure.
