Barolo Vecchie Viti 2021 di Roccheviberti è un Barolo DOCG prodotto a Castiglione Falletto da Nebbiolo in purezza. Nasce da vecchie vigne e segue un'impostazione tradizionale: fermentazione in acciaio a temperatura controllata, lunga macerazione sulle bucce e affinamento in botti di rovere francese, seguito da un ulteriore riposo in bottiglia. Al naso emergono fiori secchi, frutto rosso maturo, spezie, viola e sfumature balsamiche. Il sorso è strutturato e austero, sostenuto dalla freschezza tipica del Nebbiolo e da una trama tannica importante ma elegante. È un Barolo di carattere e profondità, costruito anche per evolvere a lungo in bottiglia. A tavola trova il suo spazio con brasati, arrosti, selvaggina, tajarin al ragù o al tartufo e formaggi stagionati.
