Sirocco 2025 di La Via del Colle è un vino bianco macerato biologico prodotto a Bertinoro, sulle colline romagnole in provincia di Forlì-Cesena. Classificato Forlì Bianco IGT, nasce da una lavorazione che valorizza il contatto prolungato con le bucce: la fermentazione avviene spontaneamente con lieviti indigeni e la macerazione dura sette mesi in anfora di terracotta. Il vino non viene filtrato e conserva un'identità strettamente legata alle scelte produttive della cantina. La lunga macerazione rende Sirocco una proposta interessante per chi cerca un bianco dalla lavorazione non convenzionale. A tavola può accompagnare verdure al forno, funghi, formaggi stagionati e piatti speziati della cucina mediterranea. Un vino da servire non troppo freddo, per apprezzarne il carattere e l'evoluzione nel bicchiere.
