Nefos is a captivating rosé crafted from three native Greek grapes—Xinomavro, Stavroto, and Krasato—grown high in the slate soils of Mount Olympus’s foothills. Handpicked grapes were fermented with native yeasts in whole bunches, then rested for eight months in old barriques. Interestingly, the previous 2021 harvest was delayed by heavy rains, resulting in higher sugar levels and a sweeter style. Mátyás Sandwich Pinot Gris is a distinctive orange wine crafted in Slovakia's Strekov region by the Mátyás Family Winery. Using organic and certified natural winemaking techniques, the grapes are grown in unpruned vineyards, helping manage ripeness and acidity despite climate changes. The wine undergoes a unique 30-day fermentation using the innovative 'sandwich method,' layering whole grape bunches between crushed grapes, allowing for carbonic maceration that enhances fruitiness and adds balanced tannins from stems. Expect expressive aromas of yellow pear, apple, herbs, dried fruit, and a hint of tea, complemented by a subtle yeastiness reminiscent of lambic beers. It's dry, juicy, and easy-going, ideal for pairing with rich fish dishes like mackerel or salmon, fried fish, and classic Italian pasta with tomato sauce and basil.
