Ristorante San Michele opened in 2009 in Val di Susa, near the Sacra di San Michele, in the center of Avigliana, province of Turin. Since then, it has become a favorite among foodies, serving traditional Piedmontese classics and mountain dishes, as well as their own original creations.
The restaurant offers a wide selection of artisanal wines from Piedmont, neighboring France, and some of Italy's most significant regions. The team includes Pietro, the chef, assisted by Tatiana in the kitchen, and Gianfranco, the owner, who supervises the menu, the management, the wine cellar, and the dining room. Gianfranco personally conducts the service, sharing the stories behind the wines he offers and where the products come from.
The project aims to make traditional Piedmontese and local cuisine contemporary, revaluing local delicacies like freshwater fish. Gianfranco is interested in working with virtuous producers and recently embarked on a cycling journey across Italy from Avigliana to Rome to collect a basket of products that he personally delivered to Pope Francis. His goal was to tell the stories of the producers he works with and promote sustainable agriculture.
About 10 years ago, Gianfranco discovered natural wine thanks to friends and fellow enthusiasts. He promoted it to friends and customers, spreading the importance of healthy and conscious drinking. To address the changing way of consuming food and wine, both with family and in restaurants, Gianfranco created a Raisin menu. This introductory menu to natural wine includes a glass and three 'merenda sinoira' plates, costs €20, and is accessible to all, allowing customers to approach the fantastic world of wines and real people.
