Agua de Mar restaurant opened to the public on February 14, 2020 in Merida, Mexico. It was founded by chef Luis Rufino, sommelier Valerie Magaña, and they were later joined by head waiter Adrian Magaña. Valerie created the concept and gave soul to the place, while Adrian is in charge of recommending the best natural wines and drinks, and works closely with chef Luis to choose the best labels for pairing with their food.
The gastronomic proposal respects local products and offers a haute cuisine experience, while also honoring the seasonality of the products from both the sea and the land.
Agua de Mar is the first restaurant in Merida to offer a complete menu of natural wines, which they say has been a challenge for locals to adopt since the wine culture in Merida is still relatively new. However, talented producers in Mexico are promoting the natural wine movement, especially in the capital where there is more variety and the scene is quickly growing.
