Caviste
Lou Cantoun comes from a small parcel in Saint Cômes et Maruejols, where the vines thrive on clay-limestone soils. It’s an unusual blend of Cinsault (10%), Clairette (30%), Chasselas (30%), and Chardonnay (30%), each variety contributing its own character. Some of the vines, like the Chasselas, are nearly a century old, adding depth and personality to every sip. Grapes are kept whole and spend three days in a cool maceration before aging around six months in steel tanks. The result is a wine that bursts with ripe apple, floral aromas, subtle spice, and hints of Mediterranean scrub. On the palate, it offers both structure and freshness, all in harmony. Try it with fish dishes, white meats, or cheese for a delightful match. Enjoy now, or set aside a few bottles to develop further complexity.
