The 2022 vintage faced five months without rain and scorching temperatures above 40°C for over forty days, creating a distinctive depth and vibrant character. Handpicked grapes were fermented with native yeasts in whole bunches, then rested for eight months in old barriques. Unfiltered and naturally produced, this wine reveals the purest expression of its terroir. Interestingly, the previous 2021 harvest was delayed by heavy rains, resulting in higher sugar levels and a sweeter style. By contrast, the 2022 edition offers an elegant dryness, balanced by fresh acidity and subtle hints of ripe red fruit. This white wine from Penedès features Macabeu grapes from Las Parelladas vineyard in Sant Sadurní. The calcareous soil contributes to its distinctive mineral and saline finish. Its name, meaning “play of bubbles,” captures the fun and vibrant spirit behind its production. Made with old Chasselas vines—some nearly a century in age—this wine benefits from low yields and careful organic farming. The grapes are pressed directly, and their juice ferments at a low temperature in stainless steel before continuing to ferment in the bottle, creating natural, lively bubbles. No filtering or disgorging is performed, so what you taste is as pure and authentic as the vineyard itself.
