Handpicked grapes were fermented with native yeasts in whole bunches, then rested for eight months in old barriques. Unfiltered and naturally produced, this wine reveals the purest expression of its terroir. Interestingly, the previous 2021 harvest was delayed by heavy rains, resulting in higher sugar levels and a sweeter style. By contrast, the 2022 edition offers an elegant dryness, balanced by fresh acidity and subtle hints of ripe red fruit. The grapes are pressed directly, and their juice ferments at a low temperature in stainless steel before continuing to ferment in the bottle, creating natural, lively bubbles.
