Caviste

Vetalarena is a white wine that shows a more local side of Huelva. It is made from Listán del Condado, a traditional variety grown in sandy vineyards north of Doñana, where the landscape and sea influence give the wine its fresh and slightly salty character. The grapes come from a 25-year-old vineyard with very low yields and are harvested by hand at the beginning of September. Fermentation with native yeasts in stainless steel keeps the wine precise and pure, while time on the lees adds a smooth, silky texture. In the glass, Vetalarena offers notes of pear, apple, soft citrus and white flowers, with hints of fennel, almond skin and a light mineral edge. Dry and lively on the palate, it has good energy, a clean persistent finish and a small bitter touch that makes it especially good with white fish, seafood, rice dishes or grilled vegetables.

Nefos is a captivating rosé crafted from three native Greek grapes—Xinomavro, Stavroto, and Krasato—grown high in the slate soils of Mount Olympus’s foothills. The 2022 vintage faced five months without rain and scorching temperatures above 40°C for over forty days, creating a distinctive depth and vibrant character. Handpicked grapes were fermented with native yeasts in whole bunches, then rested for eight months in old barriques. Unfiltered and naturally produced, this wine reveals the purest expression of its terroir. Interestingly, the previous 2021 harvest was delayed by heavy rains, resulting in higher sugar levels and a sweeter style. By contrast, the 2022 edition offers an elegant dryness, balanced by fresh acidity and subtle hints of ripe red fruit. Delight in its lightly savory edge and delicate tannins—a wonderful choice for those seeking a rosé that stands apart.

Chute Libre from Terrain Vague is a red wine with an unusual story rooted in old Carignan vines from Fitou in the Languedoc region. Its journey began when the original 2022 vintage didn't finish fermenting, leaving a bit of residual sugar. To continue the process, the winemaker added freshly harvested Macabeo grapes from 2023, allowing them to soak for two months. This creative approach also included topping up with lees from another cuvée, giving Chute Libre extra character. The result is a light, lively red with a noticeably zesty acidity and a vibrant, fluid texture.
