Malvazija 2019 di Emil Tavčar è un vino bianco del Carso sloveno, prodotto a Dutovlje da Malvasia in purezza. Tavčar, conosciuto anche attraverso il nome Tauzher, lavora circa due ettari di vigneto su un territorio severo, segnato dalla roccia calcarea e dalla Bora, senza diserbanti, concimi chimici o antiparassitari. La Malvazija nasce da vecchie vigne e affronta una macerazione prolungata sulle bucce, seguita da un lungo affinamento in legno. Nel bicchiere è un bianco macerato intenso e gastronomico, dove freschezza e concentrazione convivono con una forte impronta minerale. Emergono note di erbe aromatiche, fiori, agrumi maturi, frutta gialla e sfumature mielate, accompagnate da un sorso profondo, sapido e persistente. Si abbina bene a pesce saporito, carni bianche, funghi, verdure arrosto e formaggi stagionati.
