The 16 hectares are farmed by the family. The production of 80,000 bottles per year using biodynamic methods justifies a large staff: the Binners have always prioritized quality over quantity. Environmentally friendly viticulture (no pesticides, no herbicides), vines tended with natural plant protection products, and rigorous grape sorting after hand-harvesting reduce yields (45 hl/ha compared to the 88 hl/ha permitted for the appellation). Winemaking is equally meticulous (no additives, no sulfur, except in specific cases) with minimal filtration and aging in century-old oak casks for a minimum of 11 months.
