We discovered Joan Rubió (Xare-lo, Catalonia) at Boui Boui Shop in San Sebastián — a shop with a very interesting selection of natural wines. Joan Rubió who spent many years at a leading Cava producer, is a perfect example of a talented winemaker bringing his expertise from conventional winemaking into the world of natural wine.
