For many years the wine produced was sold and consumed exclusively locally. Only in 2015 did Giovanni decide to expand the sale of his wines to the rest of Italy and subsequently to the world.
The production method has remained the traditional one: during cultivation only natural products such as sulphur, copper and sheep manure are used; the harvest is done by hand; the destemming and maceration take place in concrete tanks for approximately 36 hours, using exclusively the indigenous yeasts present in the grapes whose spores, deposited in the cracks of the tanks over the years, give a unique identity to the wine. Maturation lasts from two to three years, depending on the type of wine and takes place in large 70hl oak barrels or in steel tanks.
Giovanni's wines embody his essence, that of his father and the entire history of the production of the Vittoria wine region and the Ragusa area.
