Pineau d'Aunis, Cinsault
Prezzo della bottiglia: 19 EUR, da asporto: 19 EUR
This white wine from Penedès features Macabeu grapes from Las Parelladas vineyard in Sant Sadurní. The calcareous soil contributes to its distinctive mineral and saline finish. The wine undergoes eight days of skin contact fermentation and spends two months on lees with weekly stirring. Bottled without filtration or stabilization to maintain its natural character, it presents floral notes and a light, mineral structure.
Chute Libre from Terrain Vague is a red wine with an unusual story rooted in old Carignan vines from Fitou in the Languedoc region. Its journey began when the original 2022 vintage didn't finish fermenting, leaving a bit of residual sugar. To continue the process, the winemaker added freshly harvested Macabeo grapes from 2023, allowing them to soak for two months. This creative approach also included topping up with lees from another cuvée, giving Chute Libre extra character. The result is a light, lively red with a noticeably zesty acidity and a vibrant, fluid texture. It's a playful yet engaging wine that showcases the imaginative style of Terrain Vague, making it perfect for those who enjoy a bright twist on traditional reds.
Caviste
Mal de Cap is a light-footed red from Espira de l’Agly in Roussillon, made from Pineau d’Aunis and Cinsault. Pineau d’Aunis brings a distinctive aromatic edge—think rosehip and hibiscus—while Cinsault adds soft red-fruit ease. The grapes are fermented with whole clusters and kept on skins only briefly, so the wine stays fresh and lively rather than dense. Ageing in neutral containers (including sandstone amphora in some cuvées) helps keep the profile clean and focused. Expect notes of strawberry and floral spice, with a gently peppery finish. It’s especially enjoyable served slightly cool, and works well with charcuterie, roast chicken, grilled vegetables, or dishes with a touch of heat.
