SOTTIMANO has been practicing organic for many years, with limited use of organic fertilizers and zero pesticides or herbicides. The spontaneous cover crop is encouraged and after harvest, every other row is tilled. No selected yeasts are used at the estate. The alcoholic and malolactic fermentations for their wines are all completed in oak, with the exception of the Brachetto and the Dolcetto (which are done in stainless steel). The wines are bottled without fining or filtration, and with only a minimal amount of Sulphur added: the finished wines usually come in around 30ppm TOTAL sulphur. I've been working the wines of Sottimano for eight years, as their importer rep in NY, and hope that you'll use this information to update their obviously natural pedigree. Thank you for reading!

The classification of this wine as unnatural is incorrect. I'll send over winemaking details for the estate ASAP. Would love to know what evidence the team here used to classify this wine as unnatural.
