Three Countries, One Philosophy: Natural Winemakers Share Their Tasting Notes

GRAWÜ

GRAWÜ is a family-owned winery founded by Leila Grasselli and Dominic Würth, celebrating their unique Alpine terroir in Italy. They produce around 20,000 bottles annually, focusing on organic practices and natural winemaking. GRAWÜ crafts dynamic wines that embody the liveliness of their family and the spirit of the mountains, capturing the true essence of each vintage.

Tasting notes: In the glass, Pinot Roots reveals a deep ruby red color. On the nose, it opens with aromas of ripe cherries, red berries, and subtle spice, enhanced by the long maceration. On the palate, it offers a balanced combination of fruit and spice, supported by fine tannins and vibrant acidity. This Pinot Noir has a long finish which creates an intense tasting experience, with great potential for aging.

Château Shuette

Château Shuette is a new family-owned regenerative vineyard and farm in Entre Deux Mers, Bordeaux, producing around 16,000 bottles annually from its 4.5-hectare vineyard. Situated on organically cultivated clay and schist soils by the Dordogne River, the domaine follows natural winemaking principles with minimal intervention and low sulphite use.

Tasting Notes: Sanguis 2023 offers a fragrant bouquet of blackcurrants, black cherry, and lavender. On the palate, it's medium-plus bodied with balanced lactic acidity, delivering fresh raspberry flavors, plush tannins, and a lightly spiced finish of black pepper and orange bitters. This fruit-forward Claret is made from Cabernet Sauvignon 80%, Petit Verdot 10%, and Cabernet Franc 10%.

Pax Wines

Pax Wines, a family-owned winery in Sebastopol, CA, was founded in 2000. Specializing in Syrah, Chenin Blanc, and Gamay Noir, they focus on organic, sustainable, and biodynamic practices. Their winemaking process includes foot-crushing grapes and fermenting with natural yeasts, ensuring a pure, artisanal approach.

Tasting Notes: The 2022 Syrah from Nellessen Vineyard bursts with aromatic intensity. White pepper, olive brine, and delicate violets leap from the glass, setting the stage for a vibrant tasting experience. On the palate, rich blue fruits dominate, intertwined with hints of spicy mint and earthy tobacco. Medium-bodied and refreshing, the wine’s natural acidity provides balance, while its savory, spicy edge lingers on a long, refined finish.
