Caviste
Blanquizal is a dry white wine that shows a different face of Pedro Ximénez. Instead of richness, it focuses on freshness, texture and a clear sense of place. The grapes come from 25-year-old vines in Moriles Altos, planted on very calcareous albariza soil, known for holding moisture in this hot part of Andalucía. Fermentation and ageing take place in used Montilla casks, and the wine spends 16 months under flor. This gives it gentle notes of yeast and pastry, together with white flowers and citrus. On the palate it is fresh, light on its feet and distinctly saline. It is an original white for anyone who wants to discover how lively and precise Pedro Ximénez can be outside the usual sweet styles.
