Open di SoloUva è uno spumante Metodo Classico da Pinot Nero 100% proveniente da Borgo Priolo, nell’Oltrepò Pavese. Le uve provengono da circa quattro ettari di vigneti esposti a sud e sud-ovest. La vinificazione segue il Metodo SoloUva, senza impiego di zuccheri esogeni, con fermentazione in acciaio e successivo affinamento di almeno 20 mesi sui lieviti. Al naso emergono fragola, agrumi e leggere sfumature speziate, accompagnate da un profilo fresco e diretto. Il sorso è secco, incisivo e scorrevole, sostenuto da acidità viva e da una piacevole tensione minerale. La componente di frutto rosso del Pinot Nero ritorna al palato insieme a una chiusura sapida e pulita. Una bollicina gastronomica e versatile, adatta all'aperitivo e particolarmente indicata con ostriche, crostacei, sushi, crudi di pesce e salumi.
