L'Asolo Prosecco Superiore DOCG Extra Brut di Bele Casel è uno spumante biologico prodotto sulle colline di Monfumo, in provincia di Treviso. Nasce da uve Glera insieme a varietà locali come Bianchetta Trevigiana e Perera, coltivate su terreni marnoso-argillosi. Dopo la pressatura soffice, il vino affina in acciaio e completa la presa di spuma con il metodo Martinotti. Nel calice presenta un colore giallo paglierino e un perlage fine e persistente, con profumi di mela gialla, pesca e delicate sfumature di frutta tropicale. Al palato è asciutto, fresco e decisamente sapido, con una piacevole impronta minerale e una bollicina equilibrata. Il basso residuo zuccherino ne valorizza la precisione e la versatilità gastronomica. Ottimo come aperitivo, accompagna crostini di pesce, fritture leggere, risotti ai frutti di mare e crostacei.
