Timox è una delle espressioni più originali del Timorasso dei Colli Tortonesi. Prodotto dalla cantina I Carpini, nasce da uve Timorasso selezionate e viene vinificato con una lunga macerazione sulle bucce in anfore di ceramica, ottenendo un autentico orange wine di straordinaria complessità. Nel calice si presenta con un intenso colore dorato tendente all'ambrato. Al naso emergono profumi di miele, frutta candita, spezie, erbe balsamiche e una spiccata mineralità. Il sorso è caldo, strutturato, sapido e molto persistente, con una grande capacità evolutiva nel tempo. È un vino dedicato agli appassionati che cercano autenticità e territorialità, perfetto per accompagnare piatti della cucina contemporanea, pesce, zuppe, funghi, tempura, carni bianche e formaggi stagionati. La produzione segue una filosofia biologica e olistica con fermentazioni spontanee e minimi interventi in cantina.
