Khikhvi 2023 di Pheasant’s Tears è un vino bianco macerato georgiano prodotto da Khikhvi, antico vitigno autoctono del Kakheti. Le uve provengono dall’area di Tibaani, nella regione di Sighnaghi, su terreni di arenaria e quarzo. La vinificazione segue la tradizione georgiana: grappoli interi, bucce e raspi macerano per circa sei mesi nei qvevri, le grandi anfore di terracotta interrate, prima di un ulteriore affinamento in qvevri. Il vino viene imbottigliato senza filtrazione. È un orange wine profondo e materico, caratterizzato dalla lunga macerazione e da una decisa trama tannica. Il sorso combina freschezza, struttura e complessità aromatica, con richiami di frutta matura, frutta secca, spezie ed erbe. È particolarmente indicato con cucina speziata, verdure arrosto, funghi, formaggi stagionati e preparazioni saporite di carne.
