Vineyards aged 55 and 25 years old, on silty-clayey alluvial soils with some stones and chalk. Average yields less than 60 quintals per hectare.
Certified organic since 1993, without the use of fertilizers or irrigation. We prevent major diseases with minimal doses of copper and sulfur, supplemented with natural fortifying extracts, to best maintain biodiversity and humus in the vineyard.
Fermentation with indigenous yeasts. Maceration of the skins during fermentation in steel vats.
Vinification without the addition of sulfur dioxide.
No rose wines at the moment.
