With each vintage, we strive to achieve a symbiosis between the terroir, the grape varieties, and our expertise. All our actions, from the vineyard to the cellar, are guided by passion.
Located on small hillsides, the Souvignargues terroir is unique: late ripening, cool breezes... Perfect for making fresh wines with beautiful expression. The vines are cultivated with every other row left as grass for the surrounding wildlife. The other row is lightly but regularly tilled to control weed growth while maintaining the soil's biological activity.
Since 2023 part of the vineyards has been worked by Joanna, the workhorse of Anaïs from Attelages du Vidourle, the latter being half of Guilhem (sometimes more as well).
Our plots are partly isolated, surrounded by oak woods. The grape varieties cultivated are: Syrah, Oeillade, Carignan, Grenache noir for the red, Ugni Blanc, Sauvignon, Alvarinho and Aranel for the white.
Vinification and aging are carried out using indigenous yeasts and no additives except for a light protective sulfiting if absolutely necessary should the wine's quality be compromised (e.g., yeast in the tank, sudden spike in volatile acidity). Rigorous attention to detail and passion are essential to producing pure wines with excellent flavor.
