Located in the heart of the Gaillac appellation, in the northern Tarn region, the estate benefits from a terroir of exceptional climatic and geological diversity. While many were uprooting the old grape varieties, the Plageoles family chose to continue cultivating Mauzac, Ondenc, Prunelart, and Braucol. Not out of defiance, but because these ancestral varieties express the profound identity of this corner of the Tarn.
With over 30 years of experience in organic farming, the estate prioritizes shallow tilling, natural ground cover, sowing, biofertilizers, and compost teas. These resilient practices aim to best support the vines and the ecosystem. In the cellar, intervention is minimal: the yeasts are indigenous, and the wine is not adjusted. The Mauzac Nature undergoes a gentle refermentation in the bottle, as it always has here, long before the term "natural sparkling wine" was coined.
It's not a revolution, but the choice, generation after generation, to remain faithful to a land and what it naturally expresses. 🌿
