Farmer, craftsman, artist fully committed to biodynamic agriculture, Domaine Christian Binner has been writing its family history since 1770 in Ammerschwihr and today covers 11 hectares.
Diversity is a source of resilience for the estate in the face of climatic and economic uncertainties. This is why it also produces its own distillery spirit, adding value to these vine by-products by offering grape seed oils, verjuices under the Mëralla brand, and vinegars made by Béatrice. The orchards, either rented or belonging to the Mëralla family, allow them to offer non-alcoholic juices and form the basis of their fruit brandies. The remaining pomace is composted, and the grape seed cake is used for heating.
While everything has to move quickly these days, I've decided to restore the value of time. I favor plowing with draft horses on the estate whenever possible. I've restored a dry stone wall, over 40 meters long, to retain the soil, incorporating traditional techniques. I cellar all vintages until I'm certain of the stability and distinctive character of my wines.
The estate offers a selection of over 50 wines and a wine library dating back to 1965, reflecting the specific characteristics of the terroirs, vintages, and the evolution of each wine in the cellar.
