Our vineyard is divided into 34 plots, 80% of which are located in Cuisles and its four neighboring villages (Olizy, Jonquery, Châtillons-sur-Marne, and Baslieux). We cultivate the three Champagne grape varieties. 80% of our vineyard is planted with Meunier, 10% with Chardonnay, and 10% with Pinot Noir. Meunier is our DNA, the grape variety best suited to our terroir.
In the vineyard, we use no chemical inputs, only copper and sulfur. We work in harmony with the lunar cycles, promoting the natural balance and energies between the soil, the plant, and all living organisms. We favor natural ground cover, gentle tilling with an electric Vitibot tractor, and biodynamic herbal teas.
In the winery, we prepare a starter culture a week before the harvest to inoculate each pomace. We use slow pressing for a minimum of 4 hours. Since 2019, we have added no sulfur. There is no filtration, nor any manipulation or additives. The secondary fermentation is achieved with the addition of organic yeasts and organic MCR (Matricaria Recyclosa). The containers used are stainless steel tanks, barrels, clay eggs, and Georgian amphorae (Qvevri).
To ensure the consistency of our approach, our cellar is also environmentally friendly: we produce our own electricity, recycle wastewater and maintain the temperature using a Canadian well.
