On the vineyard side, we work two out of three rows, sow green manure every autumn since 2001. We participate in two biodynamic groups for the joint preparation of preparations and are responsible, on a local CUMA, for the dynamization and spraying equipment (ECODYN brand).
100% hand-harvested. In the cellar, we prepare a starter culture for the reds; the whites and rosés begin fermentation spontaneously. No sulfites are added at the time of vatting or pressing. We filter before bottling (using only earth filters) and add sulfites to our cuvées (for the eight containing sulfites) at the end of malolactic fermentation and before bottling. Bottling takes place very early in the season (between November and February). The total SO2 levels in the sulfited wines vary from 35 to 60 mg depending on the cuvée.
No orange wines at the moment.
