Restaurant
In addition to the autochthonous varieties of the Vipava Valley, Primož Lavrenčić attaches great importance to Pinot Noir, which he considers to be the domesticated variety of his region. This is exactly what this uncharacteristic pinot noir, which grows on marl and flysch, shows, and is nurtured by a combination of alpine, Mediterranean and continental climates. Maceration for 20 days and spontaneous fermentation in stainless steel tanks, and maturation and aging in large and barrique wooden barrels for the next year. The wine is extremely mature for its age, with pleasant acids and juicy, medium and soft tannins. The aromatic profile is dominated by fresh floral-fruity aromatics that alternate with spicy and earthy tones.
