Ce vin est ample et incisif, d’une grande minéralité. « Ronceray » c’est le nom donné aux blancs secs élaborés sur les terroirs de Chaume et Quarts de Chaume. Le Ronceray de plaisance est issu de vieilles vignes du coteau des charmelles, ce sont des sols de schistes, spilites, grès. Un tiers est élevé en barrique (et foudre à partir du le millésime 2020).
