After a long apprenticeship with Alain Chabanon in Montpeyroux in Languedoc, I had the opportunity to vinify in very different places such as India, Russia, Corsica and the United States. In 2011 I met a lover of natural wines who introduced me to a winemaker cultivating magnificent Grenache on the heights of Vendémian, in the Hérault, organically grown for 10 years. The project of opi aqui was born from this meeting. The following year, in 2012, I vinify my first cuvées! All our wines are made from grapes grown according to the precepts of organic farming and some of them biodynamic. The grapes come from different selected parcels whose soils, mostly clay-limestone, and the exposures allow the grapes to ripen in optimal conditions. Manual harvesting in 10 kg cases is done early in the morning. We store the grapes in a cold room for 24 hours. The bottling is done by gravity with or without destemming. Fermentations are natural. The grapes ferment thanks to native yeasts and without sulphites or other oenological inputs. The first year we used a vertical press, ratchet, manual, so as to squeeze gently and extract only the necessary. Today we use a pneumatic press and reproduce soft pressure. The wines are then raised in containers adapted to their profiles and then bottled without additions of sulphites, without gluing or filtration.
