The estate is located in the town of Buxières sur Arce, a village of 110 inhabitants in the heart of the Côte des Bar. The surface is 5.5ha in organic – biodynamic viticulture since 1998. The grape varieties are shared equally between Pinot Noir and Chardonnay on clay-limestone soils with Kimmeridgian and Portlandian subsoils. The harvest is carried out manually over a period of 7 to 10 days. All the grapes are vinified in 228L and 400L barrels, the malos are made naturally. During the winter, the doors of the cellar remain open to lower the temperature of the wines and allow tartaric stabilization. Bottling is done in the spring, looking for high tide coefficients to facilitate foaming. The wines stay 15 to 24 months in aging on slats, are then disgorged without adding liquor = brut nature then return to the cellar for a period of 6 to 12 months before being tasted. Heloïse joined the family estate in 2018 and vinifies all the wines alone since 2019. Bertrand remains present at her side to manage the entire vineyard.

Le domaine est situé sur la commune de Buxières sur Arce, village de 110 habitants au cœur de la Côte des Bar. La surface est de 5,5ha en viticulture bio – biodynamique depuis 1998. L’encépagement est partagé à équité entre le Pinot Noir et le Chardonnay sur des sols argilo-calaire sous-sols kimméridgien et portlandien.

La vendange est réalisée manuellement sur une durée de 7 à 10 jours. L’ensemble des raisins sont vinifiés en fûts de 228L et 400L, les malo sont faites naturellement. Au cours de l’hiver, les portes du chai restent ouvertes pour faire baisser la température des vins et permettre la stabilisation tartrique. La mise en bouteille se fait au printemps en recherchant des coefficients de marée haut pour faciliter la prise de mousse.

Les vins restent 15 à 24 mois en élevage sur lattes, sont ensuite dégorgés sans ajout de liqueur = brut nature puis retournent en cave pour une durée de 6 à 12 mois avant d’être dégusté.

Heloïse rejoint le domaine familial en 2018 et vinifie seule l’ensemble des vins depuis 2019. Bertrand reste présent à ses côtés pour gérer l’ensemble du vignoble .
