We are Fausto and Cinzia Cellario, the third generation of winemakers in Carrù, on the western slopes of the Langhe hills. We believe in working exclusively with native grape varieties of Piedmont and we staunchly defend local traditions in the cultivation of the vines and in the cellar. We cultivate 13 hectares of vineyards (and some hazelnut trees) in three different areas in the south of the Langhe. The Dogliani estate is probably the most prestigious land of the family and we like to call ourselves "Dolcetto gang". Our agriculture is biodynamic and we only use indigenous yeasts in all fermentations. In the vineyard we use horn silica and horn manure, we plant different plants to balance the nutrients in the soil and we use sexual confusion. The presence of sulphites is absent or is added only in small quantities during pressing or bottling (only when strictly necessary). The wines are not clarified or filtered. They age in large oak barrels, concrete vats or terracotta amphorae. The main cultivated varieties are: Dolcetto, Barbera, Nebbiolo, Favorita, Nascetta, Grignolino.
