The Cellar takes its name Jerax, which in Greek means Sparrow Hawk, from the legend according to which between the VI-VII century. A.D. it was the flight of a sparrow hawk that indicated to the inhabitants of the coast the safe place, far from attacks from the sea by the Saracens, where to build the new village, on a cliff over 500 meters above sea level close to the Aspromonte. And it is here between the Ionian and Aspromonte that at about 700 meters above sea level, at the foot of a rocky ridge, we find the vineyards of the Gerecitano family. The slopes, well ventilated by the regular sea breezes, guarantee an excellent temperature range between day and night and favor the healthiness of the grapes. The vines are based on soils composed of layers of clay and sand with the presence of marine fossils that contribute to the mineral richness of the soil. In these conditions, nature takes its course without any particular interventions except winter pruning, green pruning and, only if necessary, a few sulfur treatments in the summer. Wines produced only from native grapes such as Greco Nero, Magliocco and Nerello Calabrese for the reds and Greco Bianco, Zibibbo and Mantonico for the whites, naturally spontaneous fermentations without temperature control, no filtration or clarification and only decanting in winter. All operations both in the vineyard and in the cellar are done manually such as bottling and labelling.
