After a decade or so in vinification of Coteaux Vendomois (Domaine de Montrieux), move to Hérault, more precisely to the town of Aspiran. The vines were taken over in 2005. In this region very upset by volcanism, the soils are very diverse, basalts rub shoulders with limestones or villafranchians. The vines were chosen for this diversity of soil, for their ages all over 50, for the planting and for the environment.  This wine region, a little forgotten in Hérault, has kept the original grape varieties, namely Cinsault, Carrignan, Clairette and Theret. It is on these 4 grape varieties that we wanted to develop our wine. As soon as the vines were taken over, the vineyard was managed organically. The vinifications are of course different from those of Vendôme. The maturity, the acidities, in short all the chemical compounds of the grapes are different. But the general idea of wine is the same: to be as close as possible to the grape, to intervene as little as possible, to make wine as often as possible without any input. Modern oenology wanted to replace history and tradition with modern chemistry and technology. For me nothing can replace the experience of men. All winemaking will therefore be based on old winemaking methods. We will take the time to raise the wine in tanks so that it is finished when it is bottled.
