The Binners have been winegrowers since 1770 in the "Colmar pocket" in Ammerschwhir. The 16 hectares are farmed as a family. The production of 80,000 bottles per year in biodynamics justifies a large staff: the Binners have always chosen quality over quantity. Environmentally friendly viticulture (no pesticides, no weedkillers), vines tended to with natural phytosanitary products, strict sorting of the grapes after manual harvests reduce yields (45 hl/ha compared to the 88 hl authorized for the appellation). The vinification is just as serious (no inputs, no sulfur, except in special cases) and little filtration, aging in century-old tuns for at least 11 months.
