The family estate of C&eac;line Oulié is located at Aurions-Idernes in the Eastern Pyrenees, on the eastern side Béarn.
After 10 years as an environmental engineer, Céline decided to move forward. in 2012 to fully embark on a new life project and take over the old family farm. “ The family farm, since 1924, has been marked by women. It was first my great-great-grandmother who started the project. a farmhouse, while her husband was a mason. My great-grandmother took over. It was my father, a farmer, who planted the the vines. But At the age of 40, he decided to to set up as an artisan. As a result, it was my mother who took over the business. Hence the name of Clos « Les Mets d’», a nod to the women of the family, associated with à food for the soul.
A fervent defender of biodynamics, Céline Oulié operates a real farm of around twenty hectares in one piece, including 5 hectares of vines. 3.7 hectares of red grape varieties (Tannat, Cabernet Franc, Cabernet Sauvignon) in the Madiran appellation area and 1.3 hectares of white grape varieties (Petit Manseng, Petit Courbu, Gros Manseng) in AOC Pacherenc. The rest is made up of of 10 hectares of land cereals, 3 hectares of moors and forests, 3 hectares of natural meadows, 1 lake and 2 ponds with their unique and preserved biotope.
The harvest is done manually and in crates. Fermentations are carried out with natural yeasts and the use of sulfur is reduced to a minimum (35 mg/l total max).
