Chance sometimes does things well… .when Brice Omont seeks to become a winegrower, with an inclination for organic, biodynamic viticulture, things do not seem to gain in advance. At that time, organic was still seen as a fad of certain originals in the region. Fortunately, good fairies tell him who will give him the opportunity to realize his wish: Michel Grisard. Pioneer of biodynamics in Savoie, he created the estate in 1998 on the Coteaux de Cevins.
Brice knows, tasting Michel's wines, that this is what he wants to aim for. Without further ado, and thanks to the fact that he is not yet trained in conventional viticultural techniques, Michel Grisard gives him the opportunity to join the Domaine des Ardoisières (in 2003). Together, they continue to plant different plots with indigenous grape varieties (Persian, black mondeuse, highness, roussanne, white mondeuse, malvasia and jackfruit, highness ...)
These plots are distributed over the steep hillsides of Cevins (old slate quarries from which the domain takes its name, shale soil) and Saint Pierre de Soucy (shale marls). Recently, a few acres of old vines on Apremont complete the picture.
It is in this way, by working daily with him that he is formed, that he learns, that he affirms his tastes and his choices.
As a true enthusiast, curious, he not only learns how to prune the vine, accompany it in the best possible way without chemistry, but also to vinify with the least intervention possible ... in addition to a slight addition of sulfur when bottling.
In 2009, Michel gradually leaves, not without difficulty, the reins to Brice.
Brice now produces wines that reflect his tastes, and the terroir on which the vines flourish. Always with humility and passion.
