We are 2 young brothers (32-36), born in the heart of the vineyards but without necessarily a great culture of Wine. Aymeric spent his Masters in International Trade in Wines & Spirits in Burgundy and then went to make wine in Argentina, Chile, California and South Africa. Jordan studied Traditional Chinese Medicine in Toulouse and Avignon then reoriented his path to apply to the vineyard and its environment these same principles of the Orient. We cultivate our 15 hectares of vines ourselves and our family helps us a lot. Since 2018, we also have a part-time employee to help us ... We are located in Montblanc, a small village 10km from the Mediterranean, between Narbonne and Montpellier. Our Family has lived there for over 500 years, so needless to say that we have deep roots there and that we know almost everyone! In the vineyard, the rules are rather simple: everything that can be done by hand is done by hand; only observation leads us to take this or that action, only when, and if, it is necessary; we practice organic and biodynamic agriculture (certified) but above all want to focus on the plant and its environment (in particular by promoting biodiversity). We spend most of our time in our vineyards because that's where the wine is made ... and it takes a LOT of work! In the cellar, things must be simple if we have done the work in the vineyard! By picking (and sorting) by hand healthy, ripe and concentrated grapes, we have the raw material for a great wine. No sulfites, no enzymes, no yeast, no ... anything is added to our grapes: we trust our terroir to provide them with what they need. But if the Natural wine does not require any addition of any kind, it does however require even more work and attention than conventional wine: hygiene must be impeccable, temperature control effective, the balance of the grapes ideal. Only tasting guides us for the decisions taken every day ... Some of our wines are produced without any additives or sulphites, others can simply be lightly sulphite. Everything is done on a case by case basis, without recipe or dogma. We especially make sure that they have the natural balance (made of color, acidity, alcohol and tannins) to last and be enjoyed at the table ...

<p>Nous sommes 2 jeunes frères (32-36), nés au c&oelig;ur des vignes mais sans forcément une grande culture de Vin. Aymeric a passé son Mastère en Commerce International des Vins &amp; Spiritueux en Bourgogne puis est allé faire du vin en Argentine, au Chili, en Californie et en Afrique du Sud. Jordan a étudié la Médecine Traditionnelle Chinoise à Toulouse et Avignon puis réorienté sa voie pour appliquer à la vigne et son environnement ces mêmes principes d&rsquo;Orient. Nous cultivons nous-mêmes nos 15 hectares de vigne et notre famille nous aide beaucoup. Depuis 2018, nous avons aussi un employé à temps partiel pour nous aider... Nous sommes situés à Montblanc, un petit village à 10km de la Méditerranée, entre Narbonne et Montpellier. Notre Famille y vit depuis plus de 500 ans donc inutile de dire que nous y avons de profondes racines et que nous y connaissons quasiment tout le monde ! À la vigne, les règles sont plutôt simples : tout ce qui peut être fait à la main est fait à la main ; seule l&rsquo;observation nous amène à faire telle ou telle action, uniquement quand, et si, elle est nécessaire ; nous pratiquons l&rsquo;agriculture biologique et biodynamique (certifiées) mais voulons avant tout nous focaliser sur la plante et son environnement (en encourageant notamment la biodiversité). Nous passons la plupart de notre temps dans nos vignes car c&rsquo;est là que le vin s&rsquo;y fait... et cela demande BEAUCOUP de travail ! À la cave, les choses doivent être simples si nous avons fait le travail à la vigne ! En cueillant (et triant) à la main des raisins sains, mûrs et concentrés, nous avons la matière première pour un grand vin. Pas de sulfites, pas d&rsquo;enzymes, pas de levures, pas de... quoi que ce soit sont ajoutés à nos raisins : nous faisons confiance à notre terroir pour leur fournir ce dont ils ont besoin. Mais si le Vin Naturel ne requiert pas d&rsquo;ajouts en tous genres, il demande en revanche encore plus de travail et d&rsquo;attention que le vin conventionnel : l&rsquo;hygiène doit être impeccable, le contrôle des températures efficace, l&rsquo;équilibre des raisins idéal. Seule la dégustation nous guide pour les décisions prises chaque jour... Certains de nos vins sont produits sans aucun additif ni sulfites, d&rsquo;autres peuvent être simplement légèrement sulfités. Tout se fait au cas par cas, sans recette ni dogme. Nous faisons surtout en sorte qu&rsquo;ils aient l&rsquo;équilibre naturel (fait de couleur, acidité, alcool et tannins) pour tenir dans le temps et s&rsquo;apprécier à table...</p>
