The goal was to produce a range of natural white wines from the most beautiful terroirs of the Languedoc. I therefore visited almost 300 old vines, all organic and a good number biodynamic, throughout the Languedoc region. My love for vines, coupled with my excessive tendency, led me to change my plans (the more vineyards I visited, the more I fell in love...) and so I opted for a wide range of wines, both red and white, a little rosé, sparkling wines and sometimes late and oxidative harvests!
Today we work on nine vineyard islands spread across the departments of Aude and Hérault, which represents a total of approximately 25 hectares. These terroirs are very varied both geologically (schist, clay-limestone, basalt, sand, granite, etc.) and climatically (very hot Mediterranean zones, mountainous areas, hillsides, etc.). The grape varieties include more than twenty different varieties, the majority of which are indigenous: Terret blanc and gris, Cinsault, Grenache, Aramon, Carignan, Aubun, Niellucio, Colombard, Bourboulenc, Mauzac, Vermentino, Ugni-blanc, Sauvignon, Mourvèdre, etc. All the vines are managed organically and about half are biodynamic. Since 2018 we have started working on our own vines on an area of just under one hectare and are planning to plant 3.5 ha on our new site in Villautou (Aude).
Concerning the vinification, everything is done in our Montagnac cellar ; harvesting is obviously done manually in 15 kg crates, then the vinifications are carried out in strict respect of the terroir and the fruit, without any added input (nor sulfites) and without filtration or fining (we remove nothing, we add nothing!!). We work almost everything in maceration , very often blended grape varieties (but obviously separating each terroir), almost never regulating the temperatures; the aim being to stick to the terroir and above all not to mark the wines with vinification techniques. Finally, we are lucky to vinify very old vines (more than 50 years old for the most part and up to 110 years old) and consequently very concentrated juices (average yields of 15 to 23 hl/ha in generous years!) which require long aging, mainly in sandstone jars but also in vats ...
In short, these are obviously wines that benefit from being aged between 1 month and 1 year after bottling. They are as lively as we are and fiery in their youth, but after a year of aging they are readily offered to you without decanting... Then it is up to you to keep them, because from the simplest to the most elaborate, they are all wines made with aging in mind. Without compromise, you will love them or hate them, but they will not leave you indifferent, they are the reflection of our personalities, our work and our commitment!
