Sauvignon Blanc, Pinot Gris - Tasman
Combination of skin fermented, carbonic, and whole cluster pressed PG and SB. Fermented in stainless, barrel, and amphorae. Amazingly spicy little wine with shocking texture considering it's only 12.5 abv.
Absolutely delicious wine but needs a serious decant, 1 hour at least, to let this start to open up and show its depth and complexity. This is probably my favourite natural wine to date and in the top 30 wines of the year period. Fantastic wine that's begs one to curl up on a cold fall evening in your favourite leather chair and read some chewy philosophy.
Beautiful golden New Zealand Sauvignon. Strong notes of tropical fruits and a hint of ripe apricots. Electric ⚡️

Pineapple, stones, and an almost imperceptible smoke (?from the Chardonnay grapes). Moderate acidity. Medium body. All around super well rounded. VERY pretty wine. I thoroughly enjoyed this wine. It went great with a sharp/rich aged cheddar.
