UVA Petit Verdoux dal nostro vigneto più antico. RACCOLTA Settembre-ottobre con buona maturazione fenolica. Rigorosamente manuale in piccole scatole. PRODOTTO Cordone Speronato. 4500 ceppi per ettaro. 50 quintali di raccolto per ettaro. PROCESSO DI VINIFICAZIONE Fermentazione spontanea in vasche di cemento o acciaio. Maturazione: 12-18 mesi in botti di rovere ARMENE. Affinamento: in bottiglia 12-18 mesi. Non filtrato o chiarito. In questo vino il mosto ha fermentato in modo spontaneo . Eventuali sedimenti sono indice della mancata filtrazione.
