RUNNING MONDAY 60 minutes of tiring up and down into the valley, sunny and windy today, make me earn this precious bonus. OUDE GEUZE of 3 FONTEINEN Blend n. 13, season 16-17 ..... 60% barley malt, 40% wheat. Turbid amber orange color, assembly of 3 Lambic from 3 different vintages fermented "naturally" with wild yeasts in oak barrels, nn filtered, nn pasteurized, second refermentation in the bottle, followed by refinement for about 1 year. Foamy white bulb fairly compact, not very persistent (disappears after a short time). The sulphurous aroma, flint, freshly cut green grass immediately strikes the nose, then turns on unripe fruit and citrus fruits, green apple, gooseberry, animal hints, spices and vanilla. In the mouth its typical "Senne" aroma explodes, bacteriologically acetic, lactic, cedrose, dry and vinous, a finish of salty and citrine white yogurt that makes you want to drink it. The continuous evolution in the bottle gives rise to a distinctly complex and elegant natural beer. The variables in the mixing process mean that two identical bottlings do not exist. Beer not every day, beer not easy, beer for important occasions, only for the "Running Monday" before Christmas Eve.
