Macerated with the skins for 26 days, aged in acacia wooden barrels. This wine is remarkable. It seemed a little oxidated when we just opened it but that turned out not to be the case. The wine opened up very quickly revealing deep spicey tones, dried tangerine peel, raisins and Pedro Ximenez like tones but without any of the sweetness. This wine is completely dry, well structured with clear but round, soft tannins. After a while new herby notes appeared, some mint an eucalyptus that we hadn't noticed before. A really good wine. Drank it with crispy roasted potatoes and smoked oysters. Not an obvious combination but it worked like a charm. At Lux, Rotterdam.
